What You Need:
Non tick spray
1 Tbls chopped canned chipotle pepper in adobo sauce
1 oz. unsweetened bakers chocolate2 tsp ground cumin
2 tsp dried oregano
1 Tbls chili powder
½ tsp cinnamon
4 garlic cloves, minced
2 15 oz. cans low sodium black beans (drained/rinsed)
¾ lb. sweet potato, peeled and cut into 1” pieces
1 ½ cup corn (fresh or frozen)
1 green bell pepper, diced
1 28 oz. can diced tomatoes
¼ cup shredded reduced fat cheddar (optional)

Coat slow cooker. Add chipotle pepper,
chocolate, cumin, cinnamon, oregano, chili powder, garlic, black beans, sweet
potatoes, corn, bell pepper, and tomatoes. Cook on LOW for 8 hours.

Serve chili topped with cheddar if desired.
