Smokey Black Bean and Sweet Potato Chili


Makes 4 servings

Nutrition per serving: 396 calories; 18 g protein, 71 g carbohydrate, 6 g fat

What You Need:
Non tick spray
1 Tbls chopped canned chipotle pepper in adobo sauce
1 oz. unsweetened bakers chocolate
2 tsp ground cumin
2 tsp dried oregano
1 Tbls chili powder
½ tsp cinnamon
4 garlic cloves, minced
2 15 oz. cans low sodium black beans (drained/rinsed)
¾ lb. sweet potato, peeled and cut into 1” pieces
1 ½ cup corn (fresh or frozen)
1 green bell pepper, diced
1 28 oz. can diced tomatoes
¼ cup shredded reduced fat cheddar (optional)

 What You Need To Do:

1.       Coat slow cooker. Add chipotle pepper, chocolate, cumin, cinnamon, oregano, chili powder, garlic, black beans, sweet potatoes, corn, bell pepper, and tomatoes. Cook on LOW for 8 hours.

2.       Serve chili topped with cheddar if desired.
