Bacon Cheddar Keto Meatballs

These DELISH meatballs combine the best of the burger world and the meatball world!!!

Yields 12 meatballs

1 meatball : 160 calories, 11g fat, 0.25g Carbs, 14g protein
3 meatballs w/ sauce & lettuce: 59 caps, 4g fat, 1.5g Carbs, 42g protein

Ingredients:
Meatballs
  • 1 lb ground beef (80/20 is cool)
  • 1 egg
  • 1/4 c almond flour
  • 3/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/4 c chopped raw bacon (fatty ends best)
  • Bacon fat to cook in
Sauce
  • 1/4 c mayonnaise (low sugar)
  • 1 Tbsp sugar free ketchup
  • 1 tsp Dijon mustard
  • 1 Tbsp dill pickle juice
To Eat
  • 3 Oz cheddar cheese (I like sharp)
  • 4 c iceberg lettuce shredded
  • 3 slices of bacon, cooked and broken into 12 PC
Directions
1. Combine all meatball ingredients in bowl and mix well (I use my hands but I know this technique is not for everyone). Form in 12 meatballs. Fry in non-stick pan in bacon fat for ~ 4 min. Turn over, add slice of cheddar cheese and fry for 4 more min (or until done). Remove from heat and top with piece of bacon.
2. Combine sauce ingredients and whisk together until smooth.
3. Place 1 cup of iceberg shredded lettuce on plate or bowl. Place 3 meatballs and drizzle with 1 1/2 Tbsp of sauce
