Ingredients:
Meatballs
- 1 lb ground beef (80/20 is cool)
- 1 egg
- 1/4 c almond flour
- 3/4 tsp pepper
- 1/2 tsp garlic powder
- 1/4 c chopped raw bacon (fatty ends best)
- Bacon fat to cook in
- 1/4 c mayonnaise (low sugar)
- 1 Tbsp sugar free ketchup
- 1 tsp Dijon mustard
- 1 Tbsp dill pickle juice
- 3 Oz cheddar cheese (I like sharp)
- 4 c iceberg lettuce shredded
- 3 slices of bacon, cooked and broken into 12 PC
1. Combine all meatball ingredients in bowl and mix well (I use my hands but I know this technique is not for everyone). Form in 12 meatballs. Fry in non-stick pan in bacon fat for ~ 4 min. Turn over, add slice of cheddar cheese and fry for 4 more min (or until done). Remove from heat and top with piece of bacon.
2. Combine sauce ingredients and whisk together until smooth.
3. Place 1 cup of iceberg shredded lettuce on plate or bowl. Place 3 meatballs and drizzle with 1 1/2 Tbsp of sauce
